It catered to the travelling salesman crowd -- not the Fuller Brush men, mind you, but the guys who work for Westinghouse selling circuit breakers and generators. Back in those days white shoes and belts were the uniform of these hardy souls, and so the people who ate at Knapp's were sometimes refered to as the "white belt" folks. Bill Knapp's was located conveniently close to an exit off of I-94, and had a big sign that said "BILL KNAPP's -- For a Snack or a Meal". Well it was E-Z off and E-Z on for the weary traveller, and Knapp's was often packed on a Tuesday night. From time to time some of us from town would travel down to Knapp's for a snack or a meal, and sometimes a birthday cake. You see, good old Bill Knapp would serve you a free piece of cake on your birthday. No fancy fanfare or marching band (as you get at Farrell's) but the cake was good, and so we would go to Knapp's, debate the relative merits of having a snack vs. having a meal, and indulge in a piece of Knapp's famous birthday cake while we watched the white belts come and go.
